Quinoa and Edamame Mix

I had some quinoa in the house from a while back.  I tried it & didn’t like it, as I don’t care for the taste of dirt or the smell of a vitamin.  So I decided I needed to use it and since I was out of brown rice, this seemed like a great opportunity.  This is what I did and it came out pretty good:


1 cup dry quinoa

1.5 cups carrot juice

.5 cup water

1/4 cup sliced almonds

1 cup edamame (no shells)

1 teaspoon garlic powder

2 tablespoons chopped onions

Cilantro to taste

Black pepper to taste


Put carrot juice & water in a pot and bring to boil.  Add quinoa and let simmer for 15 minutes until cooked.  Add the rest of the ingredients and stir.


Makes 6 servings.

Calories – 182

Fat – 5g

Sodium – 20mg

Carbs – 27g

Fiber – 4g

Sugar – 3g

Protein – 8g
