Cottage cheese stuffed chicken breast

Remember I blogged about everything I cooked a week ago?  I said if the stuffed chicken was good I’d make a recipe for it.  Here it is:

Ingredients:

3 chicken breasts

12 ounces fat free cottage cheese

6 spinach leaves, chopped

1/4 chopped red onion

3 tablespoons red pepper flakes

3 teaspoons garlic powder

Directions:

Cut excess fat & tendons off of chicken

Cut a “hole” in the breast so you can “stuff” it, basically.  (I ended up essentially “wrapping” mine.)

In a large bowl, combine cottage cheese, spinach, onion, red pepper & garlic and stir with fork

Use stuffing to put in chicken

Bake at 350 for 40 minutes, or whenever they’re done.. all ovens are different!

Nutrition:

1 serving = 1 chicken breast

Calories – 395

Carbs – 10

Fat – 2g

Protein – 79 g

Fiber – 1 g

I made these tonight and the hubby and I LOVED LOVED LOVED them 🙂 Put F/F italian dressing over it all and baked it, covering the pan with tin foil. Hubby couldn’t get enough!
