Ellen & Diane’s Skinny Girl Pie Creations

I was down in Atlanta over the weekend staying with my aunt and her friend.  They are both health conscious yet hungry girls who like to have their pie and eat it too.  So they came up with quite the array of pie variations using fat free, sugar free Jell-o pudding.  You could do chocolate pudding and add strawberries and raspberries on top: you could do banana cream and put bananas on top; I mean, there’s so many options.  You pick a Jell-o pudding flavor, I’ve seen chocolate, vanilla, banana cream, cheesecake and caramel, but I think there’s more.  Then you pick a fruit to add into it.  I was considering possibly pureeing fruit to add but I don’t have a puree utensil.  So this is the one I made for dinner tonight.  Like always, I dug right into the pie without taking the photos first, but it has been “GISG approved.”  Here’s the recipe:

Ingredients:

2 box ff, sugar free Jell-o cheesecake pudding

1 cup skim milk

1 cup fat free Cool-whip

1 reduced fat graham cracker pie crust

Blackberries

Directions:

Mix the first 3 ingredients in a bowl & pour into pie crust.  Let set in fridge for 20 minutes or until firm, and top with berries.
