Cinco De Mayo

Wednesday is Cinco De Mayo, so you couldn’t ask for a better reason to make a healthy, home cooked Mexican inspired meal! It’s so easy to make, so easy to clean up, and tastes DELICIOSO!! Here’s what I’ll be having…

99% fat free ground turkey mixed with sauteed onion and jalepeno for flavor (i also add some seasoning salt & red pepper flakes, but you could use any spices you want to this)
shredded lettuce
pico de gallo (i like this better than salsa in a can)
Cholula brand hot sauce (this is my fav, but use whatever you’d like, as long as sugar or high fructose corn syrup isn’t one of the first ingredients)
fat free sour cream
fat free shredded cheddar cheese
All wrapped up in a Joseph’s brand whole wheat wrap (I wrap these in a wet paper towel and microwave for 30 seconds to heat them so moisture stays in)

The way I make this is by using,
1/2 cup ground turkey
1/4 cup ff cheddar cheese
1/2 cup shredded lettuce
2 tablespoons sour cream
2 tablespoons pico
2 teaspoons hot sauce
1 wrap
Here’s the nutrition facts:
Calories – 229
Carbs – 20 grams
Fat – 3 grams
Protein – 35 grams

Other ideas would be very similar but you could change the ground turkey to sauteed chicken, green and red peppers and onion for fajitas instead that will make you say OH DIOS MIO! You just don’t have to use the oil like Mexican restaurants do.. just use cooking spray!

Sounds nice to me, only problem would be eating too many!!

Sounds great. Sounds alot similar to what I do for some meals for my family.
