Eat Like Popeye!

Tuesday night I made the best meal I think I’ve ever eaten. It’s fresh pan seared scallops and zucchini over a bed of fresh spinach. Here’s the directions:

Cut up 2 large or 3 small zucchini squash and put in a frying pan with some cooking spray and let simmer with a lid on top to become tender. Then add to that pan about a pound of large sea scallops. The fresh ones are way better than frozen. Add a tablespoon of lemon juice and lemon pepper seasoning to taste. Stir and let simmer until the scallops are cooked and the zucchini is tender. This should take 5 – 10 minutes depending on how high the heat it on the burner. I constantly stir mine so I didn’t time it.

While you are doing that place the entire contents of a bag of fresh spinach in a pot with filled about a third of the way up with water. Let this boil until the spinach is soft. Drain the water from the spinach.

You can use the spinach to make a bed for the scallops and zucchini.

It’s super quick, easy and delicious. You could add shrimp, change the veggies, change the spices for a different flavor.. there’s so many things you can do with this meal.
